If at First


I really don't know what I was thinking when I read that lemon cordial recipe. With a ratio of 6 lemons to 2kg of sugar, I am guessing that I wasn't thinking... I really should have twigged before I added the sugar, sure would have saved me a heap of juicing.

Oh boy. Something that I generally do well in these types of circumstance is recover, so when I actually tasted the stuff politely described as liquid sugar I broke out more lemons. Of course at that point I had no idea how many more lemons I was going to need to give me something that in this household might actually get used as we are really not super sweet people. Luckily I had an entire onion bag worth of lemons sitting in the pantry.... so I started juicing.

When I got to "nup my back can't do this any more today" I had made it to 8 cups worth of lemon juice. It was still sweeter than I would like but at least I could definately taste tang of the lemon. I then had problems with the fact that most of my glass beverage jars were taller than my waterbath. It seems that some days your just not supposed to succeed.

As it was I did my best and I still ended up with a useable product. Unlike most of my other experiments in this case my fridge is filled with cordial because I am pretty sure its not shelf stable. Last thing I want is to get people sick testing that little theory so it stays as cold as I can keep it and gets used as fast as possible.

Even when nothing goes to plan the rewards of making something yourself are generally worth the challenges.

LOL Belinda, I remember doing the same thing at least twice over the years!

I have a lemon cordial recipe you don't have to use the canner for, will last for 12 months sealed in a cool dark place, pop in the fridge once opened. The recipe is Deep Southern Lemonade and under recipes label if you are interested.

Absolutely nothing quite like real life to remind you that there is still so much to learn.

It certainly reinforce the whole tiny taste before you bottle routine... I could only imagine my dismay if I had found it when I was serving it to someone.

I will go check out Molly's recipe but I know mine is 12 lemons, rind and juice to 1.5kg's sugar and a ltr of water.

Thanks... I still have more lemons so I suspect I will end up making more soon. Need to make a bit more dent in the stuff I already have first so I don't have nightmares about it taking over the fridge.
