Citrus Time of Year




Yep, its marmalade time. I have been preparing for the last 3 days to get this first batch in the jar.

boy does using a known recipe make life easier. I have already made one lot of lemon "taffy". Luckily I think I know where the recipe led me astray. If I can get my hands on another load of lemons I will try again.

I am attending a BYO plate event on Friday so with any luck I can turn it from a soft mouldable product that is rather hard to handle into something that will be useful.

Another thing that I found helpful was using a candy thermometer, it meant I could see when it was close to the jelling point rather than relying on putting it in the saucer, no more jars of toffee!!!

Hi Pip,

That is a wonderful idea. In the case of this recipe I think it was caused by the instructions bringing it up to a rolling boil multiple times. I will have to go out and get a new candy thermometer, I always prefer to have a non subjective way to check such things... what temperature is jell?

I'm just thinking home made marmalade and going YUM!

Unfortunately, it is rarer than hen's teeth here in Dunedin. Lots of berry jams, but in a climate where citrus is rare, where pushing it to get the marmalade! :-(

:-) I don't think I would know when Spring was on the way if I didn't end up with 3kg of lemons sitting on my bench.

Hi Belinda,
temperature for jelly is 104C or 220F, I found that by the time I had put some jam or jelly on a saucer and let it cool a bit, that was sometimes too much cooking and then of course no jam/jelly only toffee.

I don't accidentally make toffee very often but I do hate spoiling the ingredients when I do.

Ahh berries, now you have me wondering container, or has she ripped up the turf.... will be looking for that post.
